Portable slow cooker

I was fortunate enough to acquire a Hamilton Beach portable slow cooker for less than $20!  It was one of those deals where your shopping for other things, but could not pass up on the price.  It is really a great cooking tool without having to” stand over a hot stove”.  You can cook a whole meal while you are doing other things.  Practically you can cook a whole entire meal except for some side dishes.

I have cooked a roast (of course), a whole chicken, chilli, and even London Broil!!  Each one was so tender that the meat would melt in your mouth.  The chilli will never be cooked any other way.  Just season, flip, stir, and you have the most flavorful moist dishes!!I can’t wait to try my homemade spaghetti in it!!

 

I love the oval design versus the round cylinder type of crock pot like mine, that is at least 14 years old. lol  The only thing I would recommend different is the handles on the base to stick out more than the pot.  It gets very hot and yes, I did burn myself more than once.

**The simple recipe takes less than 5 minutes to prep:

Wash chicken thoroughly and place in the slow cooker

Add spices and ingredients as desired

Add  low sodium chicken broth to cover mostly or all of the chicken (or use water and with the spices- it will make it’s own broth)

Turn the cooker to slow or high (depending on your time frame) 8 hrs for slow and 4 for fast

*The chicken will be so tender that you will not need to cut it with a knife!!
